CHENA PODA

CHENA PODA  IS A SIGNATURE SWEET OF ODISHA. THIS IS SIMPLY DEVINE.THE LITERAL MEANING OF CHENA PODA IS BURNT COTTAGE CHEESE.....CHENA IS COTTAGE  CHEESE AND PODA MEANS BURNT. IT IS MADE UP OF A FEW BASIC INGREDIENTS BUT  YIELD A SMOKY ,NUTTY FLAVORED SUBLIME DESSERT THAT IS INFINITELY RICH AND INTENSE.I DON'T THINK I CAN TRULY DESCRIBE IN WORDS WHAT A WONDERFUL DESSERT I AM TALKING ABOUT.

INGREDIENTS :


CHENA / COTTAGE CHEESE - 1 KG
                     SUJI/SEMOLINA  - 1/2 CUP
                         CHINI/SUGAR  - 2 CUPS
           CARDAMOM POWDER- 1Tbs
                        CASHEW NUTS -2 Tbs


PREPARATION:


ONCE YOU MAKE THE CHENNA .THEN TAKE THE CHENA IN A BIG BOWL AND MASH IT THOROUGHLY.


ADD SUJI AND SUGAR.MIX THE CHENNA,SUJI AND SUGAR WELL.IT WILL TURN VERYSOFT.THEN ADD CARDAMOM POWDER .


FOR GETTING THE CARAMALIZED EFFECT ON THE TOP ,APPLY A TABLESPOON OF GHEE TO THE BAKING TRAY.SPRINKLE 2-3  Tbs OF SUGAR.HOLD THE TRAY SLIGHTLY ABOVE GAS TO MELT THE SUGAR.SPREAD THE MELTED SUGAR EVENLY.


THEN TRANSFER  THE CHENA MIX OVER THE CARAMALIZED SUGAR.


PREHEAT THE OVAN .THEN BAKE IT FOR 30 - 45 MINS .INSERT A TOOTHPICK TO CHECK.IT IS COOKED WELL IF THE TOOTHPICK COMES OUT CLEAN.


BAIGANA PODA PITHA( BURNT BRINJAL RICE CAKE)

BAIGANA PODA PITHA(BURNT BRINJAL RICE CAKE)


INGREDIENTS :


  •   300 gms rice 
  •  150 gms burnt/roasted brinjal (Baigana poda)
  •  1 1/2  cup of grated coconut
  •   200 gms sugar/ jaggery 
  •  50 gms  chopped ginger 
  •  25 gms  cardamom powder
  •  25 gms  blackpepper powder
  •  1 cup  all types of dry fruits
  •   1 tbls  ghee
  •  1/2 teaspoon salt
  •  1 teaspoon baking powder


THE BRINJAL ROAST ON OPEN  FIRE .WHICH GIVES  A SMOKY AROMATIC FLAVOR AND TASTE.


PREPARATION:



1. Soak overnight the rice.

 
2. Put the rice with water in the grinder, the batter should be coarse .


3. Mix  the batter and baking powder  thn keep it covered for 1hr.


4. Mix all the ingredients grated  coconut,sugar/jaggery                                   chopped ginger,salt,dry fruits,cardamom powder,black pepper very            well.

5. Pre heat the ovan / pressure cooker.apply oil in the surface of baking       disk.pour the batter in microwave just bake it for 30-40 mins.


6. For cooking in the cooker pour the mixture into the cooker and close       the lid (without the whistle-weight).place the pressure cooker in                 simmer flame for about an hour.

ODISHA'S  MOST  AUTHENTIC DISH.PITHA IS A TYPE OF CAKE OR BREADFROM EASTERN REGIONS OF THE  INDIAN  SUBCONTINENTSCOMMON IN BANGLADESH AND  INDIA.


PODA PITHA
INGREDIENTS::

*  300 gms rice 
*  150 gms black gram(without outer skin)
*  1 1/2  cup of grated coconut
*  200 gms sugar/ jaggery
*  50 gms  chopped ginger
*  25 gms  cardamom powder
*  25 gms  blackpepper powder
*  1 cup  all types of dry fruits
*  1 tbls  ghee
*  1/2 teaspoon salt
*  1 teaspoon baking powder

PREPARATION :
1. soak overnight the rice and black gram in water in separate bowls.
2. put the black gram with water in the grinder to form a fine batter.
3. Do the same with rice but the batter should be coarse and not as fine as the previous 
     batter.
4. mix both the batter and baking powder  thn keep it covered for 1hr.
5. mix all the ingredients grated coconut,sugar/jaggery,chopped ginger,salt,dry   fruits,                cardamom powder,black pepper powder very well.

CHUDA (Flattened Rice)

1. DAHI CHUDA


A super healthy no cooking breakfast .

INGREDIENTS

  Beaten rice                  1/2  cup
  Fresh curd or yogurt    1 cup
  Sugar or  Jaggery        to taste

PREPARATION

➧ Wash the beaten rice .Drain the excess water.Just to make it slightly soft.
➧ Add yogurt or sugar /jaggery.
➧  Just mix all the ingredients.


2.CHUDA KADALI CHAKATA

Another traditional no cooking super healthy delicious breakfast of Odisha.

INGREDIENTS

  Beaten rice         1cup
  Milk/yogurt        1/2 cup
  Ripe bananas      1-2
  Grated coconut   2tbs
  Sugar /jaggery    to taste

PREPARATION

➧ Wash the beaten rice.drain all water ,just to make it soft.
➧ Add mashed bananas,milk/yogurt,sugar/jaggery .Mix thoroughly.
➧Add grated coconut .mix again.
➧ Serve immediately.

3.CHUDA SANTULA {LUNI}

INGREDIENTS

Beaten rice                              1bowl
Potato                                      1 small [finely chopped]
Different types of vegetables  1 bowl [finelly chopped]
Green chilli                              1no [finelly chopped]
Mustard seed                            1/2 tsp
Curry leaves                             
Salt                                            to taste
Oil                                              1tbs
Coriander leaves                        finelly chopped

PREPARATION

➧ Wash the beaten rice and keep aside.
➧ Heat a pan.Add oil to pan.Add mustard seed,green chilli and curry leaves .
➧ When the seeds start crackling add potato and vegetables with salt.cover the pan and cook till they       are almost done.
➧ Add the washed beaten rice and stir gently to mix it well.
➧ Put a little bit of salt.sprinkle some water .
➧ Cover the pan 2-3 mins .
➧ Mix gently and serve.

4.CHUDA SANTULA [Mitha]

 INGREDIENTS

Beaten rice       1 bowl
Bay leaf            1 no
Cumin seed       1/2 tsp
Sugar                to taste
Salt                    pinch of
Oil                    1tsp

PREPARATION

➧ Wash the beaten rice and keep aside.
➧ Heat a pan .Add oil to the pan.Add cumin seeds.
➧ When the seeds start crackling add washed beaten rice,pinch of salt and sugar to taste.mix well.
➧ Sprinkle a little bit of water and cover the pan .
➧ After 2-3 mins  mix gently and serve.

5.CHUDA LADU [Ladoo] 

INGREDIENTS

Beaten rice                           2 cups
Sugar/jaggery                      3/4 cup                             
Ghee                                    1/4 or 1/2 cup
Dry fruits                             2tsp
Green cardamom powder    1/2 tsp
Black pepper powder           1/2 tsp

PREPARATION

➧ Dry roast beaten rice until it turns into brownish colour. keep aside and allow to cool.
➧ Powder the roasted beaten rice.
➧ Add sugar /jaggery,cardamom powder,black pepper powder and dryfruits.Mix well.
➧ Finally add warm clarified butter or ghee.
➧ Make small balls and keep aside.


6.CHUDA KHIRI [kHEER]

INGREDIENTS

 Beaten rice                 1/2 cup
 Sugar/jaggery             1/4 cup
 Dry fruits                    2 tsp{optional}
 Salt                              pinch of
 Cardamom powder     1/2 tsp
 Milk                            4 cup

PREPARATION
➧ Heat a pan .Add milk to the pan.
➧ Once the milk is boiled .Add beaten rice.
➧ Cook it on medium flame till it is thoroughly cooked.
➧ Keep stirring after 2-3 mins.
➧ Add the dry fruits.{optional}
➧ Add sugar and pinch of salt to it.
➧ Keep stirring for 1-2 mins so that the sugar is dissolved.
➧ Finally  add cardamom powder .

 7.CHUDA PAGA 

INGREDIENTS

 Beaten rice                     1 cup
 Jaggery                           1/2 cup grated
 Freshly grated coconut   1/2 cup
 Cardamom powder         1/2 tsp

PREPARATION

➧ Heat a pan.Dry roast the beaten rice. keep aside.
➧ Add grated jaggery.
➧ Add grated coconut.Mix well.
➧ Finally add cardamom powder .Mixed thoroughly.
➧ Now sweet beaten rice is ready.


8.CHUDA DAHIBARA

INGREDIENTS

 Beaten rice      1bowl
 Rice                 1/2 bowl
 Cumin seeds    1/4 tsp
 Ginger              1 small piece
 Green chilli       1 no
 Salt                    to taste
 Oil                     for deep frying 


 Buttermilk                     4cups 
       OR
 Slightly sour curd          1cup+3 cups water
 Salt                                 to taste


Oil                                 1tsp
Mustard seeds               1/2 tsp
Red chilli                       1-2 nos
Curry leaves                

Roasted cumin powder
Red chilli powder
Black salt

    PREPARATION


➧ Overnight soak the rice. soak beaten rice for half an hour.Add cumin seed,salt,ginger,green chilli
     Grind into a smooth paste.

CHUDAGHASA

CHUDAGHASA is a preparation that originates from the coastal area of ODISHA.

CHUDAGHASA IS A TRADITIONAL PREPARATION FROM ODISHA.IT IS USUALLY PREPARE FOR GANESH PUJA,SARASWATI PUJA AND BISWAKARMA PUJA.
  CHUDAGHASA AND DALMA IS A VERY POPULAR COMBINATION IN THE STATE OF ODISHA.  

INGREDIENTS :

chuda                             2 cup
coconut                          1
sugar                              4 to 5 tbsp
ghee                               3 tbsp
black pepper                  7 to 8
cardamom                      1
food-grade camphor       1 small cube

PREPARATION


➧ Grate the coconut and keep aside .crush the black pepper and cardamom into powder separately.

➧ Grind the chuda to a coarse powder form.

➧ Transfer to a flat surface,add sugar and ghee.

➧ Rub the mixture between the fingers so that it forms coarse granules .the ghee and sugar should get     mixed evenly.

➧ Finally add grated coconut,crushed black pepper, cardamom and the powdered camphor .
