BAIGANA PODA PITHA(BURNT BRINJAL RICE CAKE)
INGREDIENTS :
- 300 gms rice
- 150 gms burnt/roasted brinjal (Baigana poda)
- 1 1/2 cup of grated coconut
- 200 gms sugar/ jaggery
- 50 gms chopped ginger
- 25 gms cardamom powder
- 25 gms blackpepper powder
- 1 cup all types of dry fruits
- 1 tbls ghee
- 1/2 teaspoon salt
- 1 teaspoon baking powder
THE BRINJAL ROAST ON OPEN FIRE .WHICH GIVES A SMOKY AROMATIC FLAVOR AND TASTE.
PREPARATION:
1. Soak overnight the rice.
2. Put the rice with water in the grinder, the batter should be coarse .
3. Mix the batter and baking powder thn keep it covered for 1hr.
4. Mix all the ingredients grated coconut,sugar/jaggery chopped ginger,salt,dry fruits,cardamom powder,black pepper very well.
5. Pre heat the ovan / pressure cooker.apply oil in the surface of baking disk.pour the batter in microwave just bake it for 30-40 mins.
6. For cooking in the cooker pour the mixture into the cooker and close the lid (without the whistle-weight).place the pressure cooker in simmer flame for about an hour.
